Bastian secured the rights to source grapes from a remarkable 130-year-old vineyard! Situated in the Savigny-lès-Beaune area, specifically in the lieu-dit Dessus Les Vermots, this vineyard was planted in the 19th century on decidedly pebbly soil. This winemaker's decision was to undertake whole-cluster winemaking, with spontaneous fermentation by indigenous yeasts for a period of 2-3 weeks and carbonic maceration in tanks. He favored a gentle extraction, wetting the cap with buckets until a light foot treading towards the end of fermentation. The wine matured for a period of 10-12 months in previously used 228-liter barrels and 350-liter casks, blended in tank for a month, and subsequently bottled.
