The Champagne Rosé de Saignée Logos by Timothée Stroebel is the result of 100% Pinot Noir coming from a single plot (lieu-dit) named Les Paquis of 25-year old vines located near Villers Allerand, a village classified as Premier Cru in the Montagne de Reims. The grapes were harvested in 2015. Vinification occurred without any intervention and the wine evolved at its own pace. Alcoholic fermentation is carried out with indigenous yeasts, while malolactic fermentation is due to indigenous bacteria. Pre-fermentation maceration on the lees for 36 hours and vinification and ageing in stainless steel tanks. The wine is neither filtered nor cold pressed. No final dosage (0 g/l) - making it a Brut Nature - for this complex and vinous Champagne Rosé de Saignée. Limited production of only 321 bottles. Tirage 8 sept 2016.
