Timothée Stroebel's Hèraclite Champagne is a single-varietal Meunier from two old vines plots over 50 years old, located near Villers Allerand, a Premier Cru village in the Montagne de Reims. Harvested in 2018, this wine undergoes a spontaneous fermentation with indigenous yeasts, followed by malolactic fermentation with native bacteria. Vinification and aging take place in large oak barrels. Unfiltered and unfined, this Brut Nature Champagne is a fascinating and atypical Blanc de Meunier, with no dosage added. Production is limited to just 2,116 bottles. Tirage May 2019.
