The promising Bastian Wolber has established himself as a prominent name in the wine scene. Especially regarding white wines, he demonstrates remarkable consistency in quality thanks to the use of Chardonnay grapes from a vineyard in the Maconnais characterized by calcareous and rocky soil. In this specific production, Wolber selects grapes from a vineyard planted in the 1970s, whose careful cultivation leads to exceptional results. The fermentation of the grapes takes place in barrels of various sizes, from 228 and 600 liters, for a period of about 18 months. The producer's low-intervention approach translates into the absence of filtration and the addition of an extremely reduced amount of sulfur dioxide.
